For these pancakes, I’ve added Cannellini beans. Honestly they’re one of the easiest ways in — they're mild, they blend straight into batter, and even your fussiest kid will never know they're there. One breakfast, one scoop of beans, and you've covered fibre, protein, and steady energy for the whole morning.
2 eggs
½ cup cannellini beans, rinsed
½ cup wholemeal spelt flour
½ teaspoon baking powder
1 teaspoon vanilla
½ cup Greek yoghurt
Add eggs & cannellini beans to a food processer or blender & blitz until smooth. Add the remaining ingredients.
Melt some butter in a fry pan over a lowish heat and cook pancakes in small batches.
Serve with fresh fruit, extra yoghurt, maple syrup, butter & honey - whatever takes your fancy!
