Whack-a-Legume in it Granola
If you follow me on Insta you might've seen my "whack a legume in it" series, where I take everyday foods and add a legume to it - to boost your teen's fibre, & overall nutrition, which supports their gut health, their hormones & their skin (without really changing what it tastes like!).
This week: granola.
Specifically, a granola with added quinoa which adds in a serious protein and fibre upgrade over the store-bought stuff (without turning breakfast into a fight).
Serve it with yoghurt and berries and you've got a breakfast that's actually doing a lot of work:
✔️ protein and fibre to keep blood sugar steady (which matters for periods, skin, mood & energy)
✔️ complex carbohydrates to fuel your teen's day of school, sport, etc
✔️ vitamins and minerals in the berries, quinoa & oats that support skin repair, hormone balance, and gut health.
All three of those are connected more than people realise — a happy gut supports hormone clearance, which shows up in skin and periods.
Quinoa & Oats Granola recipe
2 cups whole rolled oats
1.5 cups rolled quinoa
¾ cup currants
½ cup hemp seeds
½ cup pepita’s (or sunflower seeds, or sesame seeds)
1 teaspoon cinnamon
½ cup honey + 1 heaped teaspoon
¼ cup macadamia oil* (can sub for olive oil or avocado oil)
1 egg white, whisked
Pre-heat over to 160 degrees.
Add the oats, quinoa, hemp seeds, pepita’s & cinnamon to a large bowl & stir to combine. In a smaller bowl, combine honey & oil - mix together & pour over the oat & quinoa mix. Whisk the egg white until it is white & foamy & add to oat & quinoa mix. Mix it up well. (If you’re having trouble combining it, try using wet hands.)
Spread baking paper over an over tray and tip the mix onto the tray. Spread out well. Using a teaspoon, add over the extra honey.
Cook in oven for around 30 minutes, turning a few times. Add the currants for the last 5 minutes. You want the granola to be light brown, not well done.
Serve with a cup of Greek yoghurt and a cup of fresh or frozen berries for breakfast (or as a nutritious afternoon snack!). It keeps well in an airtight container for 1-2 weeks, so it's an easy one to batch on a Sunday.
