Wholemeal Oat Cookies
These Are The Real Deal
Sugar. Butter. Chewy on the outside, crunchy in the middle. Yes, really.
Here's the thing: I would rather your child eat one of these cookies with a piece of fruit as a snack than a packet of rice crackers or a processed protein bar. And the reason comes down to one word: fibre.
When we pair sugar (& any fast carbohydrates) with fibre and fat, it dramatically slows digestion - and that matters for lots of reasons. Carbohydrates digest as glucose and a slower digestion means a gentler rise in blood glucose, which means a smaller insulin spike. And for teens dealing with acne, mood swings, period pain, or hormonal imbalances, managing those blood sugar spikes is one of the most impactful things they can do. Big glucose spikes drive inflammation, and inflammation is at the root of all of the above.
Fibre also feeds your child's gut microbiome - those trillions of bacteria that influence everything from mood to hormone clearance. This is the part people miss: we don't just digest hormones, we need to eliminate them, and fibre is what helps bulk out the stool that carries them out. Sluggish elimination means hormones recirculate. Which is not what we want.
These cookies deliver fibre through wholemeal spelt flour, whole rolled oats & ground linseeds (in LSA), with fat from hemp seeds, butter, coconut & LSA. So while your child is enjoying something genuinely delicious, their gut microbes are being fed, their blood sugar is being buffered, and their body has what it needs to clear excess hormones & feed their healthy gut bacteria.
Bonus points if they eat a piece of fruit or some veggie sticks first - the order we eat our food matters, we want the fibre to hit before the sugar does.
A treat that actually does something. That's the goal.
Ingredients:
100 g butter
½ cup honey
1 tsp bicarbonate of soda
½ cup brown sugar
½ cup wholemeal spelt flour (could use wholemeal wheat flour as well)
½ cup dessicated coconut
1 ½ cup whole rolled oats
1/2 cup LSA
½ cup hemp seeds
1 tsp ground cinnamon
How to Make:
Pre-heat the oven to 180℃/350°F (fan forced) and line a large tray with baking paper.
In a small saucepan, melt the butter over a low heat. Remove from the heat & stir in the honey. Add the bicarbonate of soda and mix really well untl it’s completely dissolved.
Add the dry ingredients to a bowl, and pour in the butter & honey - mix well until completely combined. The mixture should feel wet and sticky but holds together when squeezed.
Using wet hands, roll the mixture into golf sized balls & press them onto the tray - flatten slightly and place well apart on the baking tray (they spread).
Bake for around 15 minutes until golden. Leave to cool on the tray.
