Brownies that count as a vegetable?! Yes!
These black bean brownies make it into so many of my Meal Plans, firstly because they’re delicious, but secondly, because they provide:
✔️ fibre (important for your child’s gut health, stable blood sugars, mood & keeps them feeling FULL)
✔️ protein (supports your child’s growth, immune health, feeling full)
✔️ legumes (which count as a serve of veggies 😱 & are amazing for your child’s gut!)
✔️ wholefood (just real, nourishing food)
✔️ iron (lacking in so many kids’ diets & so critical for brain health, immune health & behaviour)
And they are SO EASY. Just throw everything into a food processor, stir through the choc chips & bake 😊
Ingredients
1 tin black beans, rinsed & drained
1/2 cup rolled oats, blitzed to a flour
1/2 cup butter (around 40g), softened (could sub for avocado oil for dairy free)
2 heaped tablespoons raw cacao powder
3/4 cup honey (can sub for maple syrup, or even a sweetener like allulose)
1/2 cup chocolate chips, plus extra 1/4 cup for sprinkling on top
Big pinch of sea salt
1/2 teaspoon bi-carb soda
1/4 cup walnuts, roughly chopped (omit for nut free)
1 teaspoon vanilla
1 egg
Directions:
Grease & line a loaf tin & preheat oven to 180deg.
Blitz oats to a flour in a food processor, & add beans, butter & egg & blitz until smooth.
Add remaining ingredients except for choc chips & blitz until combined.
Stir through the choc chips, setting aside some for the top.
Pour the mix into the baking tin & sprinkle with remaining choc chips.
Cook for around 20 minutes & leave to cool in the pan. They should be fudgy in the middle.
