Seedy Quinoa Muesli Bars

I love a muesli bar for easy recess-lunchbox packing for my kids. The problem is, most of the supermarket ones are pretty, well, disappointing from a nutritional point of view. They’re generally more refined & higher in sugar than I’d like.

So I’d been on the hunt for a recipe for a while. Something I could give to clients, something that was easy enough for the kids to make. Something you could keep in the pantry or freezer to make those mornings packing lunchboxes as easy as they can be.

This recipe packs a punch with FIBRE, with PROTEIN and with healthy FATS - you can’t ask for more than that! Ok, you can, and yes - they’re lunchbox friendly too with no nuts 🤗

And you can add more honey - or choc chips - to get fussier kids over the line.

Ingredients

1 cup rolled oats

1 cup quinoa

½ cup desiccated coconut

½ hemp seeds

½ cup sunflower seeds

½ cup currants

1 teaspoon cinnamon

½ cup honey

½ cup tahini

How to Make Them

1.Preheat oven to 170 degrees and line a 9 inch square baking tray with non-stick paper

2.Place quinoa and oats in prepared baking tray and bake for 15 minutes, stirring every 5 minutes.

3.Measure out coconut, seeds & cinnamon into a large bowl

4.Add tahini and honey to a small saucepan and heat over medium heat until just melted and combined.

5.Tip toasted quinoa and oats in with the seeds and coconut

6.Pour warm tahini and honey over the oat mix and stir to combine. (It’s pretty sticky - you may need to use your hands!)

7.Press the mix into lined tray and bake for 18-20 minutes, until edges are just slightly browned.

8.Allow to cool completely before cutting. Store at room temperature in an airtight container.
