Best Banana Bread (Gluten-free, Dairy-free, Low-sugar, High-fibre!)
It sounds almost too good to be true - but this recipe is well-loved by my family, friends, & my clients!
Ingredients:
3/4 cup buckwheat flour
3/4 cup almond meal
1/2 cup saweet (this is an all-natural sugar alternative made from allulose, you could also use honey or maple syrup)
1/3 cup olive oil (you could also use avocado or coconut oil)
1 teaspoon cinnamon
2 large bananas (over ripe is ideal as it adds extra sweetness)
1/2 cup soy milk (you could use cows or any other type of non-dairy milk)
1 teaspoon vanilla
3/4 teaspoon bi-carb soda
2 eggs
How to make it:
Grease & line a loaf tin & pre-heat over to 180.
Blend together eggs, sweetener, olive oil, vanilla & banana. I use a jug & a hand held bamix for this.
In a bowl, add together dry ingredients - buckwheat flour, almond meal, cinnamon, bi-carb soda & stir to combine. Add in banana mix, & stir well. Pour in soy milk & combine well.
Cook for around 35 minutes - until golden brown on top & cooked throughout.
Turn out onto a cooling rack - & enjoy! We love to eat this warm with lashings of butter, but you do you!
