Best Banana Bread (Gluten-free, Dairy-free, Low-sugar, High-fibre!)

It sounds almost too doo to be. true, but this recipe is well-loved by both family, friends, & my clients!

Ingredients:

3/4 cup buckwheat flour

3/4 cup almond meal

1/2 cup saweet (this is a low-calorie sweetener, you could also use honey or maple syrup)

1 teaspoon cinnamon

2 large bananas (over ripe is ideal as it adds extra sweetness)

1/2 cup soy milk

1 teaspoon vanilla

2 eggs

How to make it:

Grease & line a loaf tin & pre-heat over to 180.

Blend together eggs, sweetener, olive oil, vanilla & banana. I use a jug & a hand held bamix for this.

In a bowl, add together dry ingredients - buckwheat flour, almond meal, cinnamon & stir to combine. Add in banana mix, stir well. Add in soy milk & combine.

Cook for around 35 minutes - until golden brown on top & cooked throughout.

Turn out onto a cooling rack - & enjoy! We love to eat this warm with lashings of butter, but you do you!
